Description

Amas (also known as maas) is a traditional Southern African fermented milk with a thick consistency and sour taste, commonly consumed as a beverage or with staple foods.

Fermentation process

  • Fresh milk placed in a container and left at ambient temperature
  • Spontaneous fermentation over 1–3 days
  • Fermented milk consumed fresh
