Description

Bilkis is a fermented sorghum porridge traditionally consumed in parts of Ethiopia as a staple or complementary food.

Fermentation process

  • Sorghum flour mixed with water
  • Spontaneous fermentation for 24–48 h
  • Fermented mixture cooked prior to consumption
