Bilkis
Description
Bilkis is a fermented sorghum porridge traditionally consumed in parts of Ethiopia as a staple or complementary food.
Fermentation process
- Sorghum flour mixed with water
- Spontaneous fermentation for 24–48 h
- Fermented mixture cooked prior to consumption
