Description

Bushera is a traditional fermented cereal beverage consumed in East Africa, commonly prepared from sorghum or millet flour.

Fermentation process

  • Cereal flour mixed with water and cooked
  • Slurry cooled and allowed to ferment spontaneously
  • Fermentation lasts 1–3 days depending on preference
