Bushera
Description
Bushera is a traditional fermented cereal beverage consumed in East Africa, commonly prepared from sorghum or millet flour.
Fermentation process
- Cereal flour mixed with water and cooked
- Slurry cooled and allowed to ferment spontaneously
- Fermentation lasts 1–3 days depending on preference

- LAB: Lactobacillus spp., Weissella spp.
- Yeasts: Saccharomyces spp. (reported in some preparations)
