Kumis (airag) is a traditional Central Asian fermented mare’s milk beverage characterized by lactic–alcoholic fermentation and light effervescence.

Fermentation process

  • Fresh mare’s milk collected
  • Inoculated with previous batch
  • Fermented with frequent agitation for 1–3 days
