Description

Maheu (also known as mageu) is a fermented maize beverage commonly consumed in Southern Africa as a refreshing drink and weaning food.

Fermentation process

  • Maize porridge prepared and cooled
  • Slurry inoculated naturally or via back-slopping
  • Fermented for 12–48 h before consumption

Functional relevance

  • Mild acidity improves shelf-life
