Maheu (Mageu)
Description
Maheu (also known as mageu) is a fermented maize beverage commonly consumed in Southern Africa as a refreshing drink and weaning food.
Fermentation process
- Maize porridge prepared and cooled
- Slurry inoculated naturally or via back-slopping
- Fermented for 12–48 h before consumption
