Nunu is a spontaneously fermented milk traditionally produced in northern Ghana and consumed as a beverage or with cereals.

Fermentation process

  • Fresh raw milk collected
  • Fermented naturally at ambient temperature
  • Fermentation proceeds for 1–2 days
