Description

Ting is a fermented sorghum porridge widely consumed in Southern Africa, particularly as a breakfast and weaning food.

Fermentation process

  • Sorghum flour mixed with water
  • Slurry fermented spontaneously for 24–48 h
  • Fermented mixture cooked into a thick porridge
